Dry Preparation of Bitter Gourd

Karlyachi Bhaji is a dry vegetable preparation of sliced bitter gourd and a masala mixture made from crushed peanuts, white sesame seeds, dry coconut, tamarind pulp, goda masala (aromatic blend of spices) and a few other common kitchen spices and condiments. Remember to squeeze the sliced and salted bitter gourd to remove excess moisture and bitterness, before it is sautéed in oil with the masala mixture. When cooked, garnish Karlyachi Bhaji with freshly chopped coriander leaves.
