Bitter Gourd in Lentil Curry

This is a simple preparation which includes bitter gourd in a way that ensures that the natural bitterness of the gourd does not dominate the taste of this dal (lentil-based curry)). The gourd is sliced into discs and boiled with split pigeon peas (toor dal). The curry is mixed with a tempering of green chillies, mustard seeds, onion, asafoetida and turmeric powder. Some chilli powder, coriander leaves, tamarind, jaggery and garam masala round up the ingredients for a tasty and hearty dish that makes use of a vegetable that some find hard to palate!
