Spicy Niger Seed Paste

Karalyachi Chutney is an incredibly simple accompaniment that is prepared by grinding dry-roasted niger seeds, garlic cloves and a few other spices into a coarse paste. First, niger and cumin seeds are dry-roasted and blended into a coarse mixture along with a few garlic cloves, red chilli powder and some salt to taste. This chutney is served as an accompaniment with chapatis (unleavened flatbread), bhakris (coarse unleavened flatbread), steamed rice and a range of other food items.
