Kandyachi Pithperun Bhaji is a traditional Maharashtrian mildly-spiced, stir-fried preparation of spring onions and chickpea flour crumbs, flavoured with a variety of common kitchen spices and condiments. The chickpea flour is dry roasted and kept aside while the spring onions are sautéed in oil along with mustard seeds, asafoetida and green chillies. The roasted flour is added to the mixture and flavoured with powdered red chillies and dry turmeric. Water is added to get the desired consistency and salt is added to taste; cook on a low flame and stir occasionally. Finally, garnish with the green portions of the finely chopped spring onions.
