Stir Fried Onions and Brinjal

Kanda Wanga Bhaji is a dry stir-fried preparation of onions, eggplants, ground peanuts, grated coconut, a little jaggery and tamarind along with some common spices and condiments. The tenderly cooked eggplant dry curry has a succulent texture as well as some spicy and mildly tangy flavours. Goda masala is a key ingredient that gives Kanda Wanga Bhaji its characteristically warm flavours, which is further enhanced by powdered red chillies and dry turmeric.
