Kanda-Tamatochi Koshimbir is a classic Maharashtrian salad preparation made of onions, tomatoes and a tempering of spices that is a staple in many households. The finely chopped onions and tomatoes are placed in a bowl, seasoned with salt, sugar and some tempered mustard seeds, asafoetida and green chillies. Mix the ingredients well and squeeze some lemon juice over the salad before it is served.
