Kakdichi Koshimbir is a refreshing salad preparation using chopped cucumbers, crushed peanuts, grated coconut, sugar, lemon juice and a tempered seasoning of select spices and condiments. Commonly consumed along with steamed rice and aamtis in Maharashtrian households during the summer season, Kakdichi Koshimbir is also an accompaniment of choice during certain days of fasting, in which case rock salt replaces regular table salt as an ingredient.
