Kairichi Kadh i is a refreshing summer curry made of raw mangoes, coconut, jaggery and a seasoning of some common spices and condiments. A special coconut-raw mango paste is prepared that is further flavoured with green chillies, coriander and ginger. A tempering of spices is combined with this watered-down paste and the flavours are balanced with the addition of some coriander powder and chopped jaggery. Kairichi Kadhi is served hot with a garnish of fresh coriander leaves.
