Kairi Bhat is a spiced rice dish with grated raw mango that is usually prepared during the onset of the summer months. Using leftover rice for this quick and simple dish is a thoughtful way of reducing food waste. The tartness of the raw mango is what makes this dish uniquely refreshing, along with the warm flavours of a tempered seasoning of spices. Some chilli powder and chopped cilantro are stirred in before Kairi Bhat is ready to be served.
