Kachya Tomatochi Bhaji is a simple dry-preparation of raw tomatoes, jaggery, peanuts, desiccated coconut and a variety of common kitchen spices and condiments. First, the dessicated coconut and peanuts are separately roasted and kept aside to cool. The chopped tomatoes are then sautéed in oil, while being flavoured with mustard seeds, green chillies, asafoetida and turmeric powder. When the tomatoes are half-done, stir in some jaggery and salt as per taste and proceed to cook completely. Finally, add roasted peanut powder, desiccated coconut and some freshly chopped coriander and stir well. Kachya Tomatochi Bhaji is commonly served with a variety of Indian flatbreads.
