Kachori is a spicy snack that is popular in many parts of the Indian subcontinent, especially as a part of street-food culture. The perfect dumpling crust (commonly prepared using refined or whole wheat flour) shouldn’t be too thick or too thin. While regional diversity plays a role in deciding the stuffing of choice, the most popular ones include yellow, green and black gram, onions, potatoes and peas along with tamarind paste, mint paste, ghee and a variety of spices (powdered turmeric, red chilli, cumin, dry ginger, coriander, dry mango and salt). The dumplings are ideally slow-fried on a low flame.
