Jilabi is a sweet made by frying pretzels of white flour batter in clarified butter, which is subsequently soaked in sugar syrup. This sweet is wildly popular across South-Asia and the Middle-East, with many regional variations of the recipe. Saffron, cardamom powder and rose essence can be added to the sugar syrup for enhanced flavour. Warm jilabis are popularly served with rabri; a sweet, condensed-milk based dessert usually prepared with jaggery, spices and nuts.
