Gulachi Pol are deliciously sweet flatbreads that are stuffed with a classic combination of jaggery and sesame seeds; served hot with a dollop of clarified butter. The flatbread dough is prepared using whole wheat flour, refined flour, a tablespoon of hot oil, salt and some lukewarm water. The contents are well-kneaded into a dough, covered with a wet cloth and kept aside. The stuffing mixture is made of grated jaggery, cardamom powder, gram flour roasted in clarified butter, roasted and powdered sesame seeds and poppy seeds along with some water. Finally, the flatbread sweets are prepared by roasting the stuffed and flattened bits of dough in clarified butter on a tavaa (flat Indian griddle) until they turn golden-brown.
