Golyache Sambhar is a spiced curry served with Bengal gram koftas (minced balls), that is usually paired with steamed rice or Maharashtrian flatbreads. First, the uncooked kofta balls are separately prepared using chopped onions, turmeric powder, red chilli powder, cumin seed powder and chickpea flour. Second, chickpea flour, turmeric powder and red chilli powder are added to tempered mustard seeds and asafoetida, followed by a few cups of water, some crushed jaggery and a pinch of salt. The kofta is then added to the curry and allowed to cook, before chopped coriander leaves are added as a garnish.
