Ghosavalyache Bharit, a mildly-spiced preparation of minced sponge gourd, makes for a wholesome and easily digestible side dish when served with coarse flatbreads. The high-water content and cooling properties of the sponge gourd are added benefits. This dish is perked up with some onions, spring onions, roasted peanuts, green chillies, ginger garlic paste, garam masala, turmeric powder and some other common condiments. Ghosavalyache Bharit is often garnished with some freshly chopped coriander leaves.
