Gavarichi Bhaji is a mildly-spiced, dry Maharashtrian stir-fried preparation of chopped cluster beans, mixed vegetables (potatoes, onions, tomatoes) and some freshly grated coconut. The ingredients are sautéed in oil along some tempered mustard seeds and further flavoured with garam masala, turmeric powder, red chilli powder and asafoetida. Add some water and cook the contents on a low flame for a while. Once the beans are cooked, some salt and grated coconut is added and the contents are allowed to cook some more. Gavarichi Bhaji is commonly served with unleavened flatbreads, lentil-curries and steamed rice.
