Gajbaje is a Konkani-style preparation of mixed vegetables cooked in a spicy coconut curry. Traditional versions of this recipe call for the use of vegetables such as amaranth stem, jackfruit seeds, bamboo shoots and colocasia leaves. However, one can use any vegetable that complements this spiced coconut curry. The key flavours of this curry are introduced by a paste made of coconut, red chillies and tamarind pulp. Gajbaje should be served hot.
