Stuffed Moth Bean Fried Dumplings

Matki Kachori are deep-fried dumplings stuffed with a mixture of moth beans, potatoes, lentils, and a wide range of spices and condiments. The stuffing is separately prepared, with a flavouring of a ginger-green chilli paste, chaat masala, garam masala, turmeric and chilli powders, as well as some mustard and cumin seeds. The kachori are fried in a thick, deep cooking pot until they turn golden brown. Serve hot with the relish or chutney of your choosing!
