Green Chilli Pickle

Green Chilli Pickle or Hari Mirch ka Achar is an instant-version of the pungent condiment, prepared by first dry roasting slices of green chillies with fenugreek, fennel, cumin, and mustard seeds. The roasted mixture is then blended into a coarse powder, and then turmeric powder, asafoetida, mustard oil, vinegar, and salt is stirred in. The pickle is kept in an air-tight container for two days and allowed to settle, before it can be refrigerated.
