Dudhi Halwa is a dense, sweet confection prepared by slowly cooking freshly grated dudhi/lauki (bottle gourd) and full-fat milk on a medium flame. Be careful to use bottle gourd with a neutral flavour as the bitter/sour variants will spoil the flavour of this dessert. Sauté the freshly grated bottle-gourd in clarified butter and subsequently add full-fat milk and stir frequently until the milk reduces and the mixture thickens. Slowly mix-in sugar (or for a healthier option, grated jaggery) and finally add finely-chopped nuts (such as almonds, pistachios and cashews) and some cardamom powder for enhanced-flavour.
