Dubuk Wadyanchi Bhaji is a Khandeshi specialty, made by slowly cooking ball-shaped bits of chickpea flour batter in a spicy gravy. The gravy is perked up with some onions, garlic, dry coconut, fresh coriander and a variety of other common spices and condiments. The key ingredient that gives the gravy its characteristic spicy flavours is kala masala (ground blend of cumin, coriander, clove, cinnamon, black stone flower, coconut, sesame and chillies).
