Double Beans Semi-Dry Preparation

Double Bee Usal is a slow-cooked dish of double beans (lima beans), onions, coconut and some common kitchen spices and condiments. Onions are sautéed with curry leaves, mustard seeds and black gram, before the water-soaked double beans are pressure-cooked and stirred in. Turmeric powder, salt and a special ground powder made of cumin, pepper, garlic, red chillies, coconut and coriander seeds are stirred in. Double Bee Usal is then cooked slowly on a low flame until the masala turns golden-brown. A little coconut oil can be stirred in for added flavours and the usal is served with unleavened flatbread or steamed rice.
