Doodh Pohe is a sweet pudding-like preparation of soaked flattened rice and thickened milk that is flavoured with powdered cardamom and nutmeg as well as a few strands of saffron. In order to prepare this simple dish, one must heat the ingredients in a pot and stir occasionally. Brown sugar or jaggery are preferred as sweetening agents and chopped nuts (almonds, pistachios and cashews) as a garnish adds a delightful crunch to this delicious accompaniment. Doodh Pohe can be served hot, warm, at room temperature or even chilled!
