Dodkyachya Shiranchi Chutney is a delicious accompaniment that is prepared using crushed ridge gourd skin and served with chapatis (unleavened flatbread) or steamed rice. Tempered mustard seeds, asafoetida, turmeric powder, crushed green chillies and sesame seeds are mixed with grated coconut and stir-fried until slightly brown. The ridge gourd skin is then added in along with roasted peanut powder, salt, sugar and dry mango powder and the mixture is stir-fried for a while longer. The mixture is first allowed to cool and then stored in an airtight container to preserve its crunchiness.
