Dhirde are soft, savoury Maharashtrian pancakes made of a spiced mixed flour dough. The five flours used in the dough preparation are made of Bengal gram, wheat, pearl millets, sorghum and rice. The dough is further flavoured with green chillies, garlic flakes, cumin, asafoetida and turmeric powder. The dough is flattened into the shape of pancakes onto a large frying pan and then cooked on a medium flame using oil. Dhirde can be served with a wide variety of thechas (coarse spiced condiments) and chutneys (paste-like spiced condiments).
