Dahi Bhat is a classic preparation of curd rice that has been seasoned with some common spices and condiments. After the curd is flavoured with some salt, sugar and a paste of ginger and green chillies, the boiled rice and chopped coriander is subsequently stirred in. Then some mustard seeds, cumin seeds, asafoetida, curry leaves and dried chillies are tempered in clarified butter to be used as a tadka. This tadka is stirred into the rice and Dahi Bhat is ready to be served along with a sour pickle and fried papad (traditional flat crisps).
