Chikki is a classic brittle of roasted peanuts, jaggery and clarified butter. The candy-base of this confectionery takes time to prepare: the jaggery syrup needs to be heated and stirred frequently until it reaches the hard ball stage. Once it does, quickly stir in the roasted peanuts, pour the mixture over a greased plate and cover it with butter/parchment paper. Even out the solidifying confection with a rolling pin, remove the paper and make horizontal and vertical slices. Once cooled, serve the Chikki immediately or store in an air-tight container.
