Chavlichya Shengachi Bhaji is a simple, traditional stir-fried preparation of long beans that is minimally spiced. First the beans are cleaned and chopped into small pieces. The beans are then cooked with some oil in a wide pot with a mild flavouring of common kitchen spices and condiments such as mustard and carom seeds, salt, asafoetida and powdered turmeric, red chillies and coriander. Chavlichya Shengachi Bhaji is ready when the beans are tender and well-cooked. Squeeze in some fresh lemon juice for enhanced flavours.
