Chavlichi Usal is a traditional legume-based spicy curry that is a Maharashtrian staple. The most flavourful additions to this black-eyed peas curry is the fresh coconut, fennel seeds and coriander seeds. This simple preparation is further perked up with onions, tomatoes and coriander leaves. Ginger-garlic paste, garam masala, red chilli powder, coriander powder, jaggery, salt, cumin seeds and mustard seeds add other elements of flavour to this curry. Chavlichi Usal is commonly consumed with polis (unleavened flatbread), phulkas (small puffed bread) and bhakris (coarse flatbread).
