Bhoplyache Bharit is a deliciously spiced, tangy side dish prepared using red pumpkin, yoghurt, groundnut powder and some common kitchen spices and condiments. First, the red pumpkin is cooked, drained of all excess water, mashed and set aside to cool. Once cooled, the yoghurt, groundnut powder, salt and sugar are stirred in, followed by a seasoning of tempered cumin seeds, asafoetida and green chillies. Bhoplyache Bharit is commonly served with a variety of Indian flatbreads and lentil-curries.
