Bhogichi Bhaji is a stir-fried preparation of seasonal winter vegetables such as carrots, potatoes, brinjals, broad beans, green chickpeas with a seasoning of common kitchen spices and condiments. The main spices used for seasoning are goda masala, turmeric powder, cumin/mustard seeds and asafoetida. Add a little roasted groundnut powder for the added crunch, a little lemon juice for added zest and some chopped coriander leaves as a refreshing garnish.
