Bhel is a puffed rice snack preparation with a medley of ingredients: a street food classic that is simply bursting with flavours. The puffed rice is perked up with boiled and chopped potatoes, roasted peanuts and split Bengal gram and freshly chopped tomatoes and onions. The key to the delectable flavours are the chutneys used: a spicy coriander-based green chutney, a sweet and sour tamarind-based chutney and a spicy chutney of garlic and red chillies. Bhel is further flavoured with some jaggery, lemon juice and a variety of spices such as powdered dry mango, Kashmiri red chillies, dry ginger and cumin. Black salt is added to taste and Bhel is finally garnished with shev (crunchy chickpea noodles) and finely chopped coriander leaves.
