Bharle Karle is a shallow-fried preparation of bitter gourd stuffed with a mixture of spice powders and served with caramelized onions. The bitter gourd is sliced vertically, deseeded and then treated with salt in order to reduce its bitter flavour (optional). It is subsequently stuffed with a mixture of garam masala, red chilli powder, turmeric powder, amchur (dry mango powder) and fennel powder and tied together with a thread. After the stuffed bitter gourd and chopped onions are fried in oil, garnish the Bharli Karla with chopped coriander leaves and serve with a variety of Indian flatbreads, pickles, lentil curries and steamed rice.
