Bharle Dodke is a dry preparation of sliced ridge gourd that has been stuffed with a paste of onions, groundnuts, tomatoes and some condiments and then allowed to simmer in the residual masalas for maximum flavour absorption. The paste is flavoured with green chillies, coriander, garlic and cumin seeds. Bharle Dodke is usually served with a variety of parathas, lentil-curries and steamed rice.
