Bhagar is a Maharashtrian barnyard millet-based dish that is popularly consumed during days of religious fasting with plain yoghurt or raita (spiced yoghurt side dish) or danyachi aamti (groundnut curry). Cumin seeds and chillies are tempered in clarified butter, to which chopped potatoes, peanut powder and malabar tamarind are added and sautéed. Water, salt and sugar are added to the mixture and brought to a boil, followed by previously roasted barnyard millet which is cooked until well-done and soft. Garnish with fresh coriander leaves.
