बटाटा वडा / Batata Wada

Potato Fritters

Batata Wada are a popular street food snack, commonly served with ‘laadi paav’ (fluffy hand-made buns), sweet tamarind chutney, mint chutney and some fried, salted green chillies on the side. Turmeric powder and asafoetida are added to some tempered mustard and cumin seeds. A fine paste of ginger, garlic and green chillies and some finely chopped curry leaves are stirred into the mixture and sautéed for a while. This spiced mixture and a little lemon juice is then properly stirred into a bowl of salted mashed potatoes that were prepared separately. Medium sized balls of the spiced potato mixture are prepared by hand and slightly flattened. These balls are then dipped into a chickpea flour batter seasoned with turmeric powder, red chilli powder and salt and subsequently deep-fried in oil until golden-brown.
