Ambadichi Bhaji is a nutritious, naturally tangy preparation of chopped sorrel leaves, garlic, jaggery and peanuts that is served as a side dish with lunch or dinner in Maharashtra. The chopped sorrel leaves are pressure-cooked along with green gram, split black chickpeas and peanuts. Tempered mustard and cumin seeds are separately sautéed with green chillies and garlic. The leaves and lentils mix is then stirred into the pan, along with red chilli powder, turmeric powder, salt and jaggery and cooked well. This stir fry is usually consumed with bhakris (coarse flatbread), chapatis (unleavened flatbread) or steamed rice.
