Ambadi or Roselle is a godsend during the hot summers of the Vidharbha region. It has cooling properties that Ayurveda promises...even the bright red colour is refreshing! Every summer making an Ambadiche Sarbat concentrate is part of many homes in that region of Maharashtra closest to the hot central Indian plateau. The Roselle buds are boiled in water to extract its colour and properties and then mixed with cumin seeds and rock salt. Sugar is added to make the concentrate which can be diluted with water when ready to be had. A true natural summer refresher!
