Aape is a quick snack preparation that is made using a semolina and curd batter, fortified with an assortment of chopped vegetables. A tempering of curry leaves and mustard seeds is mixed into the batter before it can be cooked. The batter is poured into an aape mould and then heated on a slow flame until the mini-cakes are golden brown on the outside and well-cooked on the inside. Aape are ideally served hot with coconut chutney.
