Aambolya are special breakfast crepes prepared with a batter made of soaked black gram, rice and fenugreek. The batter is allowed to ferment before the crepes are made on a wide pan coated in oil. Aambolya are cooked until they acquire a spongy texture and a brown colour on both sides. Serve hot with a chutney of choice.
