Aalepak is a special winter sweet accompaniment made with ginger, malai (full-fat cream solids), sweetener of choice and clarified butter. A ginger-malai paste is prepared which is slowly cooked in clarified butter along with sugar until a well-cooked thick mixture is formed. After stirring thoroughly, the mixture is allowed to cool inside a greased wide plate and bite-sized bits of Aalepak are subsequently cut out and served.
